In 2017, Nationally accredited bartender Brock Schulte founded Liquid Minded Commissary in Kansas City, producing clear cocktail ice for his London-style bar, The Monarch Bar. What became a premium product for this high-end cocktail bar, became a family-owned operation supplying clear ice to over 20 bars and restaurants in the Kansas City metro area. Now known as Fountain City Ice, the company has expanded into a commissary kitchen, producing over 20,000 pounds of ice a month, fresh citrus and syrups for bars.

Fountain City Ice has 3 Clinebell machines in-house. These machines allow ice to be directionally frozen into 300lb blocks, pushing out all of the impurities. This creates crystal clear ice blocks that will then be hand-carved into cubes.
Fountain City Ice also has a Hoshizaki sphere machine, 1 of only 7 in the United States. Hoshizaki is the leading food and beverage equipment manufacturer in the world. This machine produces 1.8" spheres.
Fountain City Ice filters all the water for producing ice and fresh syrups via a
4-phase filtration system through Carbon and Coconut husk.
